Chilli Jam Sponge Pudding


This quirky recipe really does work! You get the sweetness of the jam and sponge with the custard, with a little bite from the chillies! Yummy! And its so quick and easy to cook in the microwave! 3 minutes is all it takes! 1 pudding serves two.




  • 1 egg
  • 50g caster sugar
  • 50g Butter
  • 50g self-rising Flour
  • 2 tablespoons of Sweet Chilli Jam
  • Custard



Beat the egg in a mixing bowl with the sugar. Add the softened butter and flour and mix until smooth. Take a medium plastic pudding bowl, such as a Christmas pudding bowl, and spoon in 1 tablespoon of the jam, spreading around the edges, then the other spoonful in the bottom of the bowl. Spoon the sponge pudding mix into the bowl and even out. Cover with Clingfilm with a small hole pierced in the top, or a loose lid, and cook on full power in the microwave for 3 minutes (800w). When cooked, turn upside down onto a plate or bowl, cut into required serving sizes, pour over custard, and enjoy!
