Salt and Pepper Prawns

 

This simple recipe is a great starter to accompany Chinese food. And is quick and easy to make. This goes great with our Thai Sweet Chilli Sauce as a dip!

Serves 3-4 people.

 

 

What you will need:

  • One 225g frozen bag of jumbo king prawns, defrosted (approx 20-25 prawns if your buying fresh).
  • 4 tablespoons of corn flour.
  • 2 tablespoons of sea salt.
  • 2 teaspoons freshly ground black pepper.
  • 1 or two red birds eye, or similar finger chillies.
  • 1 onion or 3-4 spring onions.
  • Sesame or vegetable oil for shallow frying.
  • Optional: Pinch of Garlic salt, and Chinese five spice for seasoning.

Method

  1. Mix the corn flour, salt, pepper, and seasoning in a medium bowl.
  2. Chop the chillies, and onions.
  3. Add the prawns and coat them in the seasoning. Shake off excess and leave them aside.
  4. Pour enough oil into a wok to shallow fry the prawns and get to a high temperature.
  5. Add the prawns to the wok, cook for 1 minute, then add the chillies an onions and cook for a further 2 minutes, turning the prawns halfway through.
  6. Remove with a slotted spoon, draining as much oil as possible, u can soak up more oil by putting kitchen roll in a bowl and spooning the prawns into int before serving.
  7. Arrange the prawns on a serving platter, with the chilli and onions garnished on top, and serve with a side dip of Thai Sweet Chilli Sauce!
